Egg Curry

My daily dose of protien is usually got by eggs. Very versatile,easy and quick to cook:). I usually have it for breakfast,today since i couldn t i thought of making egg curry for lunch!

Ingredients: |Preparation Time:15 mins|

  • Eggs  4 (Hard Boiled, peeled)
  • Onion  1 medium(Finely chopped)
  • Tomato  2 medium(Finely chopped)
  • Ginger Garlic paste   1 tbspn
  • Red chilli powder   1 tspn
  • Turmeric   1/2 tspn
  • Garam masala powder   1/4 tspn
  • Ghee 2 tbspn 
  • Salt as per taste
  • Coriander  leaves  few sprigs for garnish(finely chopped)

Method: |Cooking Time : 15 mins|

Heat some ghee in a pan and lighty fry the boiled egg, caramelize it on all sides with a bit of salt. I love to use ghee in Indian cooking ,it not only enhances flavour but also is better than oil and butter. Now take out the eggs and keep it aside. In the same pan add some more ghee and put in the ginger garlic paste and saute it for a few seconds ,add the chopped onion and saute it until it turns golden brown then add in the chopped tomatoes and mix it well ,add salt ,red chilli powder and tumeric and saute it for a minute. Add 1/2 a cup of water cover it and let it simmer. Meanwhile cut the eggs into halves. Once the curry starts boiling add the garam masala powder and mix it well, reduce and add the cut eggs slowly and let it simmer for a few more seconds. Put if off and garnish with chopped coriander leaves. Serve it  hot with rice or roti:)
