Chicken Cafreal

The name sounds exotic and difficult for some,but one of the easiest dish that can be made without any exotic spices:) Just things that you might have in your kitchens anytime!! This is probably one of the easiest Goan Dish which can be made and is loved by most of my friends…you will be surprised! This can be made as a starter or as a accompaniment for  your meal!

Ingrdients:|Preparation Time: 1 1/2 hour ,including marination time|

  • Chicken  1 kg(preferably with bones,cut into medium size)
  • Onion  1 large (sliced)
  • Ginger  1 inch
  • Garlic   5 to 6 cloves  
  • Green chillies   6
  • Coriander seeds   1 tbspn
  • Cumin seeds 1 tspn
  • Cloves   6
  • Green cardamom  8
  • Peppercorns   8
  • Cinnamon   1 inch stick
  • Salt as per taste
  • Vinegar   3 tbspn
  • Oil  to deepfry + 3 tbspn

Method:|Cooking Time: 20 mins|

Heat some oil and deep fry the sliced onion until crisp and  dark brown and take it out in an absorbent paper and keep it aside for garnish. Make incisions on the chicken pieces. Dry roast the spices, peppercorn,cinnamon,cloves,green cardamom,coriander and cumin seeds and cool it ,later grind it into a paste along with the green chillies,ginger and garlic adding little water if required. Marinate the chicken with this along with some salt as per taste,you can add a little more than usual as we ll be adding vinegar, so that the sour and salt  taste is balanced! Marinate minimum for an hour ! 

Heat  3 tbspn of oil in the pan to be cooked in,add the marinated chicken into it and cook it on medium for 15 mins,stirring occasionally. Cover and cook,once it s almost cooked add the vinegar and cook it on high fo 2 mins. and put it off.

Rest it for a while. Garnish with the fried onions before serving.
