I must confess, had i not stopped buying cookies from the stores, probably i would have never tried making them at home! Its always the first time that you re apprehensive, about trying out something new! But once you crack the formula, then there s no looking back:).
After i had tried out the oat cookies, i figured out a few things about baking them with different ingredients. Including fresh flavors are always nice and i tried this using the fresh orange juice and zest, also to make it a little nutty thought of adding in some almonds as well! To my surprise it had a very different texture to it, it was hard and crunchy from the outside and had a softer centre. Perfect!
Ingredients:|Preparation Time: 10 to 15 mins|
- Fresh Orange Juice 1/2 cup(Juice of 2 oranges)
- Orange Zest 1 tbspn
- Wheat Flour 2 cups
- Almonds 1/2 cup(Powdered coarsely)
- Brown Sugar 1 cup(Powdered Fine)
- Pure Olive Oil 3/4 cup
- Baking Soda 2 tspn
- Salt 1/2 tspn
Method:|Baking Time: 15 to 20 mins|
Mix all the ingredients together and make a dough. Preheat the oven at 180 deg C. Take small equal portions of dough(make any shape of your choice), keep it small and placed 1 inch away from each other on a greased baking tray. Bake it for about 15 mins, check if its lightly browned or else bake it for 5 minutes more. Once done, pull the tray out and let it cool for 10 mins and then take it out and store it in a jar. Serve it with tea:)
