The colors of nature(Vegetables,Fruits and Flowers) are so beautiful, irresistible! I like my platter to be colorful and everyday i try to create dishes of different colors! So today, i tried to make a colorful salad using the (Red,Yellow and Green) Capsicum. Even though they re are crunchy on their own i thought it needed something starchy to balance it off, so thought if i could mix it with some potatoes! Had to either bake the potatoes or shallow fry them. I chose to fry them to golden brown. Quiet enjoyed it!

- Potato 1 big(Sliced/Cubed)
- Garlic 5 cloves(Finely Chopped)
- Capsicum Red 1/4 (Sliced/Cubed)
- Capsicum Green 1/4 (Sliced/Cubed)
- Capsicum Yellow 1/4(Sliced/Cubed)
- Pure Olive Oil 2 tbspn
- Chilli Flakes 1 tbspn
- Basil Leaves 1 tbspn(Chopped)
- Salt as per taste

Heat the oil in a pan, add the chopped garlic, saute it and add the potatoes and saute it for a while, add salt to taste and keep frying it until it turns golden brown, for about 5 to 6 minutes. Lower the flame, add the chilli flakes and basil leaves and mix it in, add the capsicums and put off the flame and mix it well. The capsicum should remain crunchy. Serve it hot. The flavors of garlic and the basil are so overwhelming, i just loved it!
