It s a challenge to make a tasty veg soup for me, as i always like to have chicken stock/broth as the base in my soups, which gives an additional flavour to the vegetables in it. Now i have stopped eating chicken and i love soups, so i had to try out some interesting combinations of vegetables to make soup!
This one that i prepared few days back tasted amazing, and let me come out of the mental block that veg soups are tasteless/boring:)! Quiet simple to make n not too time consuming either. If you re not in a mood to cook a full meal, i ll assure you, this soup will not only fill you up but also give you the required nutrients!
Ingredients |Preparation Time:5 mins| (Serves 2)
- Onion 1 medium,sliced
- Green chilli 1
- Garlic 8 cloves
- Butter/Olive oil 1 tbspn/ 2 tbspn
- Potato 1 large,cubed
- Carrot 2 medium,cubed
- Mushroom (Any variety,i used button) 3 cut into quarters
- Beans 5 chopped
- Cream/Milk 2 tbsp/ 1/2 cup
- Salt and Pepper as per taste

Heat butter/oil in a pan, add the onion, garlic and green chilli and fry it until the onion turns pink. Add the cut potato, and let it cook for a while, as thats the vegetable which will take longer time to cook, so that goes in first and cover it for about 3 minutes and then add the mushrooms, carrots and beans into it and saute it for a while, add some salt to taste and water to cook it with. Bring it to a boil and let it cook for about 7 minutes. Put off the stove and cool it completely. Churn the entire mixture in a mixer and get it to a smooth consistency. Transfer it to a pan and check seasoning, add pepper powder and when its about to come to a boil add in the milk or cream and stir it well. Remove from heat and serve it hot with you favorite bread or crisp. Hope you enjoy the soup as much as i did!
