Stuffed Capsicum


One of the best vegetables used for stuffing would be bell peppers…You can use it a whole or halved!

I just tried with the halves, with the most versatile stuffing potato..and kept it low cal without the versatile cheese:-)


Ingredients:|Preparation Time: 20 mins|

Capsicum 2 medium(deseeded and halved)

Olive oil  4 tbspn

Potato 2 medium(boiled peeled and mashed)

Onion 1 large(sliced)

Salt and Pepper as per taste





Method:|Cooking Time:15 mins|

Preheat the oven at 190 C . Heat some oil in a pan and put in the sliced onions and saute it for a few minutes until it turns pink ,then add the mashed potato,put off the flame ,season it with salt and pepper and mix it well. Stuff the halved capsicums with this stuffing and place it on a greased plate inside the preheated oven for 10 minutes.(You could grate cheese before putting it in the oven,will give a added flavor to the dish). Remove it once done and serve it hot with some ketchup if required! This is a easy and quick starter:)
