Pumpkin Dish

Red Pumpkin is not only visually beautiful but also is  tasty. It can be used in various dishes ,varying from curry,dry dish to cakes, muffins and ice creams! Very versatile! I love the smell of the vegetable when it s being cooked:). Today i cooked up a simple dry dish which can be eaten with rice or roti!

  • Pumpkin  1 small size(Skin peeled and diced)
  • Garlic 4 to 5 cloves
  • Tamarind  a small piece
  • Coconut   1/2 cup(grated)
  • Coriander seeds  1 tbspn(roasted)
  • Cumin  1 tspn(roasted)
  • Red chillies   4(roasted)
  • Pepper corn 1/4 tspn(roasted)
  • Fenugreek seeds a few(roasted)
  • Jaggery  a little bit
  • Curry leaves  a few (finely chopped)
  • Mustard seeds 1/4 tspn
  • Oil/ Ghee  2 tbspn
  • Salt as per taste

Grind coconut,garlic,coriander,cumin seeds,red chillies,jaggery,pepper corn,fenugreek seeds and tamarind,coarsely. Heat some oil/ghee in a container,add mustard seeds and when it stops to splutter add the curry leaves and then add in the diced pumpkin. Saute it for a couple of minutes. Add salt as per taste, mix it well a cover it and let it cook for about 5 mins. Open the lid and add in the ground masala and mix it well. Add a bit of water ,lower the flame and let it cook for another 5 minutes. Open and check if it s done ,if not let it cook for another 3 mins and put it off. Let it rest for a while before you serve it. Goes well with rice:)

* Tip: It s always good to keep your spices roasted while storing, as it saves time during cooking.
