I try and avoid most white things in my diet at home.So for the longest of the time i have never baked a cake ,as the core ingredients are all white(white flour,sugar,butter). It s been ages that i have bought white flour at home for a simple reason that most white things are unhealthy:(.But most of the sweets are made using white flour!And i have a bad sweet tooth:(. I have also switched over from sugar to jaggery. It s just a matter of time you get used to the taste. So i had to carefully try and alternate all these ingredients to bake a cake, yet keeping the taste intact!! So I tried to bake a cake with wheat flour rather than white flour! Jaggery instead of sugar and oil instead of butter!
Ingredients:|Preparation Time:10 mins|
- Wheat Flour 2 cups
- Jaggery 1 cup(powdered)
- Walnuts 1 cup(cut into small pieces)
- Carrots 2 cups(grated)
- Oil 1 cup
- Baking powder 1 tspn
- Cinnamon powder 1 tspn
- Eggs 3
Keep all the ingredients ready.

Sift the wheat flour ,baking powder and cinnamon powder into a mixing bowl. Break in the eggs ,add the oil and jaggery and mix it well with a blender and see that the batter is smooth without any lumps formed. Add in the carrot and walnuts and mix it well. Meanwhile pre heat the oven at 200 C .
Grease a mould and pour the mix into it. Once the oven is ready put in the mould and bake it for an hour. Check by piercing in the middle of the cake to see if it s done ,if it comes out clean then it s done. Rest it for a while until it cools down a bit and then take it out of the mould and cut it in your desired shape!
I like eating the cake with a scoop of ice cream,so i warm the cake a bit before serving it with the ice cream:)
