Aloo Palak

Greens are rich in iron ,so eating any green in any form ,raw or cooked,is good for us. Palak (Spinach) is one of the best of the lot and used a lot in Indian cooking and it is also one of the commonly grown greens and available through out the year. Spinach is also rich in calcium. I like to include greens everyday in my cooking in which ever form possible.

Ingredients:|Preparation Time:10 mins|


  • Palak(Spinach)   2 bunches
  • Coriander leaves  a few sprigs
  • Mint   a few leaves
  • Green chillies  3
  • Ginger  1 inch
  • Garlic   3 cloves
  • Onion  1 big (sliced)
  • Coriander seeds   1 tbspn
  • Cumin   seeds 1 tspn
  • Pepper corn  1 tspn
  • Cinnamon 1/2 inch
  • Cloves  2
  • Tomato  1 big(chopped)
  • Potato   2 big(diced)
  • Oil 4 tbspn
  • Salt as per taste
  • Fresh Cream for garnish

Wash all the greens and drain them.Take some oil in a pan ,when hot add in the spices and saute it for a while, then add the onion ,green chillies, garlic and ginger and saute it until the onion becomes a little pink. Then add the washed greens and let it reduce then add some salt and then the tomatoes and let it cook for a coupe of minutes. Put off the flame and let it cool. Once it s cool,puree the mixture.


Now take a little more oil and add the diced potatoes and salt as per taste into it  and saute it until it turns a bit brown and cooked ,then add the puree into it and get it to a boil and put it off. Add fresh cream for garnish and serve it hot with roti or rice:).
