Vegetable Pulao

One of my easy and quick veg pulao recipe:). As i say, being a little organised helps us to cook faster,so most of the times i chop,shred,slice or dice my vegetables and store it in the refrigerator, thats why i find my cooking simple and time saving!! No stress:)

Ingredients:|Preparation Time:15 mins,including 10 mins soaking time for rice|

  • Rice  2 cups(soaked for 10 mins and drained well)
  • Vegetables  1 bowl(diced,any vegetables of your choice,i ve used potato,carrot,mushroom,green peas,corn,beans,green capsicum)
  • Onion  2 medium(sliced)
  • Tomato  3 medium(sliced)
  • Green chillies   3  slit
  • Ginger garlic paste   1 tbspn
  • Cinnamon   1 inch
  • Cloves   4 to 5
  • Cardamom  2
  • Bay leaf  1
  • Oil/Ghee   5 to 6 tbspn
  • Turmeric  1/4 tspn
  • Red chilli powder  1 tspn
  • Coriander powder  1 tbspn
  • Salt  as per taste
  • Coriander leaves  a few sprigs for garnish

Take some oil/ghee in a deep pan in which you ll be cooking the pulao. Once it s hot add in the whole spices,bay leaf,cinnamom,cloves and cardamom. Then add the sliced onions,green chillies and saute it until the onion turns pink ,then put in the  rice into it and saute it well for 5 minutes until it becomes a bit crisp,then add the tomatoes and vegetables(except green capsicum) and mix it well. Add the red chilli ,turmeric and coriander powder and mix it well again,add salt as per taste ,now add double the quantity of rice, hot water into it and get it to a boil,then lower the flame cover it and cook it for approximately 12 to 13 mins. In the 12 th minute open the lid and add the diced green capsicum and chopped coriander leaves and close it ,put it off and let it rest for a few minutes before serving .Mix it a bit before serving.

Serve it hot with your favourite raitha. I made tomato ,onion and green chilli raitha:)
