Egg Pulao

It was one of those days that i dint have any  chicken at home and thought of cooking egg pulao instead! Nothing to match chicken biryani ,which is my husbands favourite! But egg pulao would be quicker to cook though! Boil in some eggs,grind a masala for the rice and cook it along the rice and then add in the boiled eggs in:) .Serve it with some of your desired raitha:)


Ingredients:|Preparation Time: 45 mins including soaking time for rice of 30 mins and boiling the eggs for 10 to 12 mins|Image

  • Rice   3 cups(soaked for 30 mins and drained)
  • Eggs   8 ( boiled,shell peeled and gashed)
  • Onion  medium 3 (roughly chopped)
  • Tomato   medium  3 (roughly chopped)
  • Green Chillies   6 to 8( as per your taste)
  • Garam masala ,whole(cinnamon,cloves,green cardamom:2 inches, 8,5)
  • Bay  Leaf  1 big
  • Coriander Leaves  a handful
  • Mint  Leaves   a  handful
  • Ginger  1 inch
  • Garlic   6 cloves
  • Turmeric  1 tspn
  • Coriander  Seeds   1 tbspn
  • Cumin Seeds  1 tspn
  • Poppy  Seeds   1 tbspn(roasted)
  • Pepper corn  1 tspn
  • Ghee/Oil    5 tbspn
  • Salt as per taste

Method:|Cooking Time: 20 mins|

Grind the onion ,tomato,green chillies,poppy seeds,coriander and mint leaves,coriander and cumin seeds,pepper corns,turmeric,ginger,garlic,1 inch of cinnamon,5 cloves,3 green cardamom  into a fine paste without adding any water! Take some oil/ghee in a pan ,when it s hot add the boiled eggs into it and also add in 2 tbspns of the ground masala with a bit of salt and fry it for a couple of minutes and keep it aside . This is because unlike other meats we cant cook the eggs along with rice ,so to give it the same flavour as the rice will have we  need to do this!ImageImageImage

Now take some more oil/ghee in a bigger vessel you ll be cooking the rice in. When it s hot enough add in the remaining cinnamon ,cloves,cardamom and bay leaf. When it stops crackling add the soaked and drained rice into it and keep mixing it for atleast 5 mins until the rice becomes a bit crisp. Now add in the masala and make sure to add enough water so that it doubles up to the measurement of the rice,that s 6 cups including the masala. Mix it well, add the required salt as per your taste and get it a boil. Now keep it on low flame ,cover it, cook it for 12 mins. If needed check after 12 mins if the top layer of rice is cooked well ,if not mix the top to the bottom and cover it for 5 more minutes on low and then put it off .Then add in the eggs, mix it in slowly so that the grains dont break and rest it for a while before serving.


You can serve it with your desired raitha,i had it with the okra raitha[ ,as there was  a bit of crunch in it  and i loved it:)
