Wined N Browned

It was a lazy sunday evening, just had a couple of chicken fillets and some vegetables in the fridge. I was in a mood for some white wine. Poured some for myself and the power goes off!! Was thinking of grilling the fillet ! What to do…was hungry as well!!…Sipping my wine, gashed the fillet, added some salt and pepper,kept it aside ,had some orange peels in the frigde,sliced them really thin and added them to the chicken with some olive oil. No sign of the power still! Meanwhile cut some potato cubes and par boiled them,cut some carrots ,beans and broccoli and everything was ready for my meal except the electricity. Thought to myself ,forget it, and pulled out my griddle pan and heated it up…put in the fillet when hot, browned it on both sides and let it cook, added the potatoes ,browned them ,saw the bottle of wine,poured some of that in as well:)…then put in the remaining veggies as well and my meal was ready!!!

Ingredients:|Preparation Time:10 mins|

  • Chicken Fillet    2 (Cleaned and gashed)
  • Potato   2 medium (Diced)
  • Broccoli   1 small bowl
  • Carrot    2  (Diced)
  • Beans    50gms  (Cut Long)
  • Pure Olive oil   Generous amount (As its  cooked on high flame you might need more)
  • White Wine   3/4 of a glass
  • Orange Zest   of 1/4 of the peel(Sliced very thin)
  • Salt and Pepper as per taste

Method:|Cooking Time:15 mins,including time for par boiling the potato|

Add salt ,pepper ,orange zest and olive oil to the chicken and keep it aside. Meanwhile boil the diced potatoes (dont over  do it,takes approximately 5 to 7 minutes),drain it and keep it aside. Heat the griddle pan, drizzle a bit of olive oil and when it s hot put in the chicken fillet ,let the flame be on high as we want the meat to brown! Cook it on each side for a couple of minutes and you can see it brown, reduce the flame and let it cook ,it wouldn t take long,should be done in about 5 to 6 mins! Add in the boiled potatoes and toss it along with the chicken ,now increase the flame and add in the white wine. After a few seconds remove the chicken fillet from the griddle and place it on the serving dish, the potatoes also will start browning,then add the rest of the vegetables and add in little more wine if you wish and season with salt and pepper ,4 mins on the pan put it over the chicken fillet to be served! If you re in a mood for a very light meal this is it, perfect and well balanced:)
