Coriander Chicken

Green masala is my favourite when it comes to cooking  with any meat, we can make it with a combination of mint leaves,coriander leaves and green chillies and most of the easily available spices in your kitchen. It s always good to marinate any meat before you cook it, atleast for a minimum of 30 mins. In this recipe i ll be using only coriander leaves you can also try it adding mint  leaves as well.

Ingredients:|Preparation Time: 40 mins including marination time of 30 mins|

  • Chicken   1 kg 
  • Coriander leaves   a handful
  • Onion   1 small (roughly chopped)
  • Garlic  5 cloves
  • Ginger  1 inch
  • Green Chillies   6
  • Pepper corns   1 tspn
  • Cinnamon  1 inch stick
  • Cloves  6
  • Poppy seeds 1 tbspn(Roasted)
  • Curds   2 tbspn
  • Oil   5 tbspn
  • Salt as per taste

Method:|Cooking Time:20 mins|

Clean the chicken pieces and make incisions so that the marinade seeps into the meat. Grind all the ingredients onion,garlic,ginger,cinnamon,pepper,green chillies,curds,poppy seeds and coriander leaves into a fine paste. Add this to the chicken along with salt and marinate it for 30 mins.

Take some oil in a pan to be cooked in, when it s hot add the chicken in and saute it for 2 mins ,cover it and cook it on medium ,turning the chicken pieces ocassionally, for 15 mins.

Open  cook it on high flame as we don t want the chicken to have too much watery masala,it should be semi dry and a little brown on all the sides. Once the chicken is cooked let it rest for a while before serving. This can make a tasty starter:)
