Veg Pakodas

Vegetarian starters are easy to cook as the cooking time is less for the vegetables. My all time favourite starters are the pakodas.  Literally any vegetable can be used to make this! I know it s a very common snack every Indian household might be making, so how do i make it differently! Usually the batter for these pakodas are fairly simple with the chickpea flour(besan), with some salt and red chilli powder. I like to give it a bit of flavour to the  batter. And garlic is my favourite :).

Pakoda no.1{Onion Pakoda}


Ingredients |Preparation Time:15 mins|

  • Onion   3 big (Thinly sliced)   I use the blender to chop them fine:)
  • Green chillies   3 to 4 (finely chopped)
  • Curry Leaves  few leaves (finely chopped)
  • Coriander Leaves few sprigs(finely chopped)
  • Chickpea Flour(Besan)  Just enough to bind them.
  • Rice flour  1 tbspn
  • Sodium Bicarbonate(Baking Powder)  1/4 tspn
  • Refined Rice Bran Oil to deep fry
  • Salt as per taste

Method|Cooking time:10 mins|

Wash the onions well. Chop it fine. Take a mixing bowl and put in the   finely chopped onions ,green chillies and curry and coriander leaves .Add some salt and leave it for a while so that it leaves out some water on it s own, start adding the chickpea flour and mixing all the ingredients with your hand ,keep adding the flour until all the ingredients bind well. Now add the rice flour and baking powder and mix well. Take some oil ,enough to deep fry it in a pan. When the oil is hot enough take a small portion of the mixture and put it in the oil,take small portions and fry in a group.  Once it s done drain it in an absorbent paper and serve it with ketchup:)

Tip: You can make similar pakoda with some  combinations of greens as well[amaranth and dill,or palak]  but when you use greens chop in some garlic as well:) , cabbage(shredded) and many more such vegetables!

Pakoda no. 2{Capsicum Pakoda}


Ingredients |Preparation Time: 20 mins|

  • Green Capsicum  1 big(cut into cubes)
  • Chickpea Flour  1 cup
  • Rice Flour  1 tbspn
  • Garlic  6 cloves(crushed fine)
  • Pepper powder  1/4 tspn
  • Red chilli powder  1/4 tspn
  • Refined Rice Bran Oil  1 tbspn(for the batter),  enough to deep fry
  • Baking Powder a pinch
  • Salt as per taste

Method|Cooking Time:10 mins|

Take a mixing bowl and put in the chickpea flour ,rice flour ,salt , garlic, pepper ,red chilli powder, and oil, pour in some water and blend it well to make a medium consistency batter without any lumps, let it soak for 15 mins. Just before you re ready to fry the capsicum add the baking powder. Take enough oil to deep fry and when it s hot enough dip the capsicum pieces in the batter and let it coat well all over and fry until done!

Tip: You can make similar pakodas with other vegetables as well ,such as potato(sliced),brinjal(sliced),raw banana (sliced) and also chicken(fillet cut into small pieces:)
