Malabar Chicken

This is the most simplest and quickest recipe one of my friends had shared with me a decade ago and it s an unbelievably one of the most tastiest dish and a total hit among my friends. I believe in simplicity and i always follow it in my cooking as well. The minute you add in too many spices into a dish it can only have a complex taste, so best is to keep it simple…always less is better:)…what matters is the way you cook it. Cooking is definitely an art and we can master it with trial and errors , so dare to experiment:)



  • Chicken  1 kg
  • Curry leaves (generous amount ,more the better,finely chopped)
  • Red chilli powder 1 1/2 tbspn
  • Turmeric  1/4 tbspn
  • Coconut oil  4 tbspn (try and don t substitute the oil as the taste lies in the coconut flavor)
  • Salt as per taste


Clean the chicken, gash it and marinate it with red chilli powder,turmeric and salt and leave it over night if possible. Otherwise a minimum of 30mins. Put in 4 tbspn of oil in the pan you ll be using ,once hot add in the curry leaves,let the flavor infuse into the oil. When it stops crackling add the marinated chicken pieces and mix it well keep stirring it for a while as the oil gets coated well. Cook it on medium flame until it s cooked, dont cover as it might leave out excess water. This dish has to be dry. Might take 15 to 20 mins to get cooked. Rest it in the pan after done and then serve as a starter!

Tip: Whenever you have to use curry leaves in your cooking it best to chopped finely and used as you can eat it rather than throwing one of the healthy ingredients from your dish,same goes with green chillies as well deseed them and chop it really fine before cooking:)
